these oatmeal cookies are soft and chewyloaded with lots of rolled oats andchewy plump raisins with a pleasantcomforting hint of cinnamon this is myfavorite recipe for making self-tanchewy oatmeal cookies and these cookiesare so easy to make and they always pickup so beautifully so let's see how tomake these soft and chewy oatmealcookies in five simple steps so let'sstart by mixing together all the dryingredientsapart from sugar in a bowl so add in theflour cinnamon powder baking soda andsaltand with them together so that thebaking soda the salt and cinnamon powdergets evenly distributed in the flour nowlet's add in the oats and raisins youcan use old fashioned rolled oats orquick-cooking oats or instant oats tomake these cookies here I've used thetraditional rolled oats which can givethat rustic look and a chewy texture tothe cookies I like some plum pre raisinsin my oatmeal cookies so I've usedraisins and if you don't want to addraisins you can skip this step or if youwant to add something else likechocolate chips or cranberries you canadd them instead of raisins so mixeverything together and keep it aside[Music]in another ball let's mix together allthe best eating proteins so add in thesoftened butter and sugar here we haveused both the granulated sugar and brownsugar so let's start by creaming thebutter and sugar and here I'm using ahand mixer to cream them together we canalso do this by hand with the help of awhisk if you feel comfortable and don'tforget to scrape down the sides of thebowl in between[Music]and once they turn a light and fluffylet's add in the vanilla extract an eggand whisk until they are well combinedthis screaming can create very small airpockets which when heated up in the ovenalong with other live nurse helps thecookies to puff up beautifully and makethem alight[Music]and now we have two balls one with wetingredients and the other one with dryingredients so let's mix them togetherand while mixing make sure there are nodry patches left behind[Music]so now our cookie dough is ready this isa thick okay dough which does not needto be refrigerated before baking so ittakes more portions of dough about oneand half tablespoons using a spoon or anice cream scoop for even measurementsand place them on a baking tray linedwith a parchment paper or on to unknownstick baking tray and take care to keepyour cookies about the same size to helpthem bake at the same rate in the ovenand press the top of the cookie doughgently with a spatula before taking theminto the oven and leave about one andhalf to 2 inch space between each cookiedough as they will spread a little whenbaked and now they are ready to go intothe oven so bake it at 350 Fahrenheitpreheated oven for 10 to 12 minutes[Music]until the edges are lightly golden brownand the center may remain pale and thismay seem underbaked when they are justout of the oven the center will be verysoft to touch but if we bake for longerit will lose its softness and thegreenness in the center hello the cookieeater stands in the baking tray itselffor about three to four minutes and thentransfer this onto a cooling rack andlet them cool down completely and thesecookies are soft in the middle andperfectly chewy with a crispy edge andoats are full of healthy fibers and keepyou feel fuller for longer and theaddition of raisins not only gives thosea chewy cookies their signature flavorbut also it makes them a healthiercookie and that subtle aroma of cinnamonadds a pleasant flavor to our cookiesnow let me show you the differencebetween cookies that are made with athick old-fashioned rolled oats and thinrolled oats here is the cookie made withthe pin regular rolled oats which is themost basic type of oatmeal that we canfind and the texture is a bit differentfrom that of Pig rolled oats becausethey have smaller and fragmented flakesand these cookies tasted just asdelicious as the other one and cookiesmade with regular or instant oatmealtend to look prettier because they don'thave that big odds floating around inthem and they give a more uniformtexture and when using old-fashionedthick walled ODEsit gives that rustic look and more chewytexture to the cookies I personallyprefer the chewiness and texture ofold-fashioned rolled oats[Music]if you want to crease the dough you canfreeze the shaped cookie dough and justdrop a spoonful of cookie dough on aparchment lined baking tray and freezethem and once frozen transfer this ontoa freezer bag and keep it in the freezerand when you want to bake the cookiestake them out and allow the cookie doughto sit at room temperature for a fewminutes before baking I hope you likethis out meal cookie recipe and I cansay no store-bought cookie can give thatPleasant flavor and chewy texture
