today's March 17th 2020 and we're livingin a new reality and in this realitywe've just got to sanitize everythingyou got to sanitize all the handlesbehind the doorknobs dishwasher handlesof the knobs refrigerator handles even adispenser that dispenses water toasterhandles clean the counters like crazy ifyou are create or make sure you sanitizeyour gear and then you gotta wash yourhands properlyyou gotta scrub the back your hands inbetween your hands in between yourthumbs and your fingernails keep yourfingernails clean[Music]for now this is what I'm doing beforeand after I use my kitchen[Music]I guess we're in the thick of I don'teven know crazyunprecedented things nobody has reallyever experienced right now we're allsupposed to be at home social distancingwhich is different than quarantine wearen't sick when you're sick you'requarantined the rest of us who aren'tsick or could be sick our socialdistancing it means we're at homeworking or doing whatever the thing isrestaurants are closing and minimizingservice by the minute this is what we'vebeen training for stocking up the pantrylearning how to make broths and stockspacking up the freezers sauces usingminimal ingredients to make wholesomedelicious food and that is what we'regonna continue to do now that you knowwe could all be dealing with this forthe foreseeable future and it's reallyimportant for us to all be doing thesame thing think of it as a patrioticact but it's not for your country it'sfor humanity we're doing this collectiveselfless act in order to protect ourneighbors and in that sense it's maybesomething that like I've never see amotional thing to see that being done bya humanity and everyone is comingtogether to understand that we've justgot to do one thing and we couldprobably save a lot of people maybe youand I might not be prone to dying but mymom has Lyme's disease she's got anautoimmune thing so you know the stepsthat I'm taking already really toprotect my mom what I'm doing is makingsure we're all safe we're fed and youknow we're staying smart another thingis grocery stores just got slammedrestaurants are in pain these grocerystores are today re stocking up ongroceries and we've got to give it timewe cannot go in there and shock thesystem which is what we're doing we haveto be sensible about what we're buyingright now we all have to be considerateof others and buy what we need and stockup over time we're not preparing for theArmageddon we're shopping for like a colweek at a time and that's all we have todo and that's the responsible thing todo so now on the show we are going totransition a bit we're going to talkreal basic stuff and that's why I've gota freezer full of stock I've got tomatosauces in the freezer I've got cans oftomato sauce ready to goI've got enough food for a few weeks ifsomething were to go really bad but I'mnot preparing for Armageddon and I don'thave piles of toilet paper we just needto be really smart right now andunderstand that all of our actions haveconsequences I just needed to vent alittle bit I'm just like you I'mconfused and you know worried but tocombat that I've been staying in thekitchen cooking the show will go on andwill run the show in a way thataddresses the reality of the moment andwe can't really ignore that so todaywe're going to make an essentialbreakfast we got to keep our immunesystem strong and we got to make gooddecisions and oatmeal is a great thingthat we could be eating right now I'vegot steel-cut oats not gonna stick myhand in but as you can see looks alittle bit like broken rice and this isbetter than quick cooking oats orregular kind of flat rolled oats that'sjust a more processed product this isfar less processed and you're gonna geta lot more nutrients I'm like I'm notgonna sit here and tell you all thethings that open oats are good for youcan do your own research pretty widelyknown and right now we're gonna rely onthis we can cook it with water and thenwe can season it with some cinnamon andthen some maple syrup now maple syrup isa natural healthy sugar and at themoment sugars are not ideal you shouldbe trying to minimize the amount ofsugars that you're eating but if you doneed to have sugars use the naturalhealthy kind I've also got some almondswhich I think I'm gonna use as well soI'm going to toast these up and I'mgonna chop them up I think I'll take alittle bit of an apple and cut it intodices and then that Apple and thatalmond are gonna be kind of sprinkled ontop basically cinnamon maple syrupoatmeal and then maybe we'll top alittle bit of cinnamon on top and thereyou have it it's gonna be very simplevery delicious but the steel-cut isgonna give texture and it's gonna bemore like eating a risotto than it islike eating oatmeal and for me I thinkthat's the problem with oatmeal as thatrolled oat texture is just unpleasantand soft and I think that's why manypeople might not enjoy Ohas much so let's just jump right into itI'm gonna get into toasting nutschopping them dicing my Apple and thenwe're gonna cook the[Music]so we have our chopped almonds anothersource of crunch and another texture andsome healthiness I'm gonna dice thisonce the au meal is done so it doesn'tBrown one cup is plenty and what I cando is I can always save whatever I haveleftover portion it out and then thenext day add maybe a little bit ofliquid to it and reheat it and then Ihave some already made leftover you canalmost meal plan this but we're gonnamake one cupnow steel-cut oats do cook longer twentyto thirty minutes if you did not soakthem if you want to speed that up maybeby half then the night before you canjust cover these oats in water that'sgonna hydrate them enough to help quickin that cooking process so all we'regonna do now is get these rinsed offreally quickly there's a lot of grit onhere so we want to strain this and rinsethis real quick and so to that one cupwe have about three and a half cups ofwater you could do three cups you coulddo four cups it doesn't really matterit's about three or four to one cup isthe ratio but I can always add morewater as needed so if it's absorbing alittle too much and still a little odddente I'll just add a little bit morewater and you can use milk and you canuse whatever but we're beingconservative now because times havechanged and we don't need to use milknecessarily it will be different it'llbe creamier it'll be a little sweeterbut water will work just fine and sothat's what we're gonna use today so I'mgonna add a little bit of nuts into theoatmeal once it gets to be nicely cookedand then a little bit on top and againthe Apple we're just gonna bring it allover it on over to the stove and I'lltake you through it there get a pan onmedium heat and add a tablespoon ofbutter and the oatmeal and just toastthat oatmeal for a minute or two[Music]now add the water season thatimmediately with salt and then bringthat up to a boil and drop it down to asimmer[Music]now you want to cook this for about20-25 minutes stirring occasionally sonothing sticks to the bottom until themixture becomes nice and creamy and theoatmeal is cooked through you'll see itstart to thicken over time[Music]once it's at a nice consistency and it'scooked through you can add about half ofthe almonds a little bit of cinnamon anda couple tablespoons of maple syrup mixthat all together then turn off the heatadd another knob of butter give it afinal taste and adjust for seasoninggotta cut this Apple really quickly intodices so what we do is we just take partof the knife and we just like to cutthin slices just slowly towards the coreof the Apple and you cut it into slicesand then you turn it and cut it intolittle dices[Music]now I promise you I never liked oatmealmy whole life until I started eatingsteel cut it really gives you risottofeel and then you add the crunchiness ofthe nuts and the sweet chewiness of theapple and you go from something that wastexturally boring normally somethingthat has life to it it has sweetness ithas crunch that is chewiness it's reallygood oh they're doing here a little bitit's gonna fill you up so much goodstuff going on in hereI took around 20 minutes to cook Ipromise you you got to try the steel cutoats we put a little grasp of butter inhere that's all good that's solublenutrient is something that needs a fatto enter your body and to be absorbed soa lot of these things do need some sortof fat and it's good to use a grass-fedbutter or an olive oil we got the goodhealthy maple syrup I promise you willlike this now for the last hour I forgoteverything now is happening in the worldis owned into cooking I became obsessedwith making a beautiful perfectdelicious plate of oatmeal and I've beendoing that throughout the week and I'vebeen trying to showcase it on myInstagram if you're not following gofollow you'll keep up to date with allmy cooking throughout all this but thisis the escape a lot of the escape isgone movies are postponed sports arecanceled the restaurants are closingguys if you're not cooking now then youjust don't get it it's now moreimportant than ever and I know a lot ofyou are stepping into the kitchen forthe first time you have no idea what todo but you know you need to startcooking no need to worry I'll be herewith you on the front lines weather inthis storm[Music]cuz times about to get weird anduncomfortable don't panic don't freakout don't go to the store and run theplace and clean you got to think aboutyour neighbors a lot of people are gonnabe hurting right now some people don'teven access to food restaurants areclosing down like Nook temporarily likethey're not gonna real they cannotsurvive two weeks of being closedI know creators who are losing branddeals and don't know if they're gonna beable to pay their rent this is going tobe something pretty serious so what Iwant you guys to do is start thinkingabout each other thinking about everyonetogether maybe ghosts throw five dollarsto that creator that you want to supportor buy a gift card from a restaurantsend them a message that you're thinkingabout them and that as soon as theyreopened you'll be at the restaurantjust think about your neighbors takecare of somebody if somebody needsgrocery shopping done figure out a wayto get it done we need to take care ofeach other right now this is what it isall about all the other stuff that wekind of worry about it really meansnothing we're down to basics here andit's all about feeding each other takingcare of each other staying healthy andprotecting each other so like I said I'mgonna be here in the front lines withyou guys we're gonna be working throughwhat to make fresh pasta is that now thestores are sort of cleared out of thingswe're gonna get through it we're gonnaget
