hi guys today on Davidson we are making
carrot cake oatmeal cookies these two
desserts just belong together and they
are so easy to make so let's go alright
the first thing we're gonna do is we're
gonna add our softened butter into a
large bowl I have two sticks here it's
nice and softened next time throw in
some white sugar then we're gonna plop
in some of that light brown sugar okay
go ahead and just mix this up you want
to mix it up just until everything is
well combined
alright go ahead and mix it on up and
it's looking make sure to scrape down
the sides of your bowl okay and it
should look like this right here okay
just looks like a cookie batter doesn't
it alright so now we're gonna add in our
eggs alright I should have probably done
this one at a time but y'all know me I
don't listen throw in lots of vanilla
extract and then go ahead and just mix
this up get everything mixed up well and
don't forget to scrape down the sides of
your bowl perfect and next we're gonna
add in some carrot I have some finally
finally finally finally shredded carrots
okay go ahead and toss those in there
and then I'm gonna add in a little bit
of carrot pulp I just kind of pureed
some carrots with water just to get a
different type of texture here and it's
gonna add some moisture to our cookie so
that's perfect go ahead and just mix
that on in there okay that's perfect
just like this think I dunno just throw
it in it'll be perfect now in another
bowl another large bowl we're gonna add
our all-purpose flour we're gonna throw
in a little bit of salt okay next we're
gonna add in some baking powder and then
we're gonna add in some baking soda and
then we're gonna add in some cinnamon
and a pinch of Chloe want to okay Nevers
gonna mix it up get everything you know
the word combined my favorite word
everything we'll combines okay that
looks perfect their guns add the wet
mixture into the dry mixture or other
way around really don't matter okay so
I'm gonna pop it in there and it's go
ahead and fold it you wanna stir this up
just until the flour is mixed in well
don't over stir with this when it's mix
in well then stop stirring it up okay
when it's all mixed in go ahead and toss
in that oatmeal I'm using the quick
one-minute oats you know how like using
those old-fashioned oats it's like
crunchy your nuts I can't get down I
can't
alright alright so when it's all mixed
in we're pretty much ready to go we have
a yummy
oatmeal carrot cake better and it tastes
so good oh my gosh you could stop eating
it
go ahead and plot these use a mini ice
cream scoop okay so either mini ice
cream scoop go ahead and plot these on a
baking sheet I haven't Lite with
parchment paper
these cookies don't spread out much I
went ahead just you can put them close
together and then go ahead and add your
little white chocolate chips you can
also put the chocolate chips in the
batter if you want to order to stick
more like I did bake at 350 for 7 to 8
minutes and when they come out let them
sit on the pan for about 2 minutes
before removing them to the cooling rack
all right and then I went ahead and
melted me some more white chocolate and
you can use um the what's it called the
vanilla vanilla morsels if you don't
like white chocolate but yeah you have
to have some kind of morsel on this
thing because the cookies really aren't
that sweet but when you add that punted
it chocolate it just go so well together
and you guys these cookies taste better
the next day
when I first made them yeah I didn't
like them I was like okay you know I
wasn't really feeling them but the next
day I was like oh my god so you want to
make them make them the day before ok
and there's the texture it's like really
eating a piece of carrot cake and cookie
form is fluffy and moist love it and you
