- Hey guys.
So I am a firm believer ina muffin for all seasons.
And now that we are in the dead of winter,
you are going to lovethis apple cinnamon muffin
with a oatmeal crumble topping. (laughs)
It is like a bowl of your
favorite oatmeal in a muffin form.
It's super simple to put together,
and would be great for a brunch,
or you can even pop them
in the freezer and have them as a snack.
Let me show you how to put it together.
In a large bowl you'regoing to add two eggs,
and a 1/2 cup of brown sugar.
Now normally I will usewhite sugar for my muffins
'cause I find that it createsa really nice light crumb,
but in this situation the brown sugar
adds so much more flavor to the raisins
and the apples that it'sdefinitely the way to go.
Then you're also gonna add 1/3 of a cup
of vegetable oil and 2/3 cup of water.
Now most of you by now knowthat I love to use water
in all of my muffin recipes because I find
that it creates a muchmore moist and light muffin
than if you use milk,because milk always has
some fat in it, even if you use 2%,
and that will weigh down your muffin.
So definitely go for the water
and you will see a dramatic difference.
Then in a medium bowlyou're going to add one
and 3/4 cup of all-purpose flour,
two teaspoons of baking powder,
two teaspoons of cinnamon,and 3/4 teaspoon of salt.
And you can whisk that all together.
Then you're gonna add your dry ingredients
to your wet ingredients,just a little bit at a time,
stirring gently untileverything is combined.
Then to our batter we're
going to add 3/4 cup of diced apple.
You really can use any apple you like,
I typically use Fuji apples
'cause that's what weusually have on hand.
I also leave the skins on, just because
it's easy and there'snutrition in the skin,
a third of a cup of currants,
so I love to use little currants
in muffin recipes becausemuffins are so small.
If you use the raisins,
sometimes they can bea little bit too big.
Then your also gonna add
1/3 of a cup of chopped walnuts.
So you can mix that all up until combined,
and then you can scoop yourbatter out into a muffin tin,
or I'm using this Silpat muffin mold,
which is my new favorite thing. (laughs)
I think it's reallyawesome for making muffins
because they just pop right out.
There's no need to use
any papers or grease it, it's so easy.

Then you can set that aside
while we prepare our crumb topping.
In a small bowl you're gonna add 1/4 cup
of all-purpose flour,
three tablespoons of old fashioned oats.
So you don't want to usethe quick-cooking oats,
because they'll just kindof disintegrate on you.
You wanna use the old fashioned oats,
that's what's gonna giveyou the crunchy topping.
A tablespoon of brown sugar, 1/4 teaspoon
of brown cinnamon, and 1/2a teaspoon of baking powder.
That's gonna help outcrumble puff up a bit.
And then you're just gonnastir this up with a fork,
until everything is combined,
and then you're goingto add three tablespoons
of melted butter, and 1/2 ateaspoon of vanilla extract,
and then I also like toadd a little pinch of salt.
Then you can stir that up with a fork,
and you'll see a nice crumb will develop.
So then you wanna take about a teaspoon
of this crumb topping on each muffin.
It really doesn't take more than that,
you don't want them I think too sweet,
its just the perfectamount, a little teaspoon.
Then once all you muffins are covered,
you can pop your tray in the oven
at 375 degrees Fahrenheitfor just 25 minutes.
And when you cut into them, you will see
how delicate and moist these muffins are,
flavored with that brownsugar and cinnamon,
and of course that crunchyoatmeal crumb topping.

(30g) flour 3 tbsp. (25g) old fashioned oatmeal 1 tbsp. (12g) brown sugar ¼ tsp (1.25ml) cinnamon ½ tsp (2.5ml) baking powder 3 tbsp. (45ml) butter, melted ½ tsp (2.5ml) vanilla extract METHOD: Preheat oven to 375F (190C). Line a 12-cup muffin tin with muffin papers or spray with baking spray. In a large bowl combine eggs, brown sugar, vegetable oil and water. Whisk to combine. Set aside. In a medium size bowl whisk together flour, baking powder, cinnamon and salt. Add the dry ingredients to the wet ingredients, in thirds, until combined. Do not over mix. Fold in the apples, currants and walnuts. Set aside. In a smaller bowl make the crumb topping. Combine the dry ingredients and whisk together. Then add the melted butter and the vanilla. Whisk together with a fork until a dry crumble is formed. Scoop muffin batter into muffin tin with an ice cream scooper, filling ¾ of the way full. Top with 1 tsp of the crumble. Bake for 20-25 mins until golden brown. ABOUT THIS CHANNEL Hi!
