hey guys it's live welcome back to my
channel today I have a brand new vegan
cookie recipe for you and this is kind
of a momentous occasion because I pretty
much don't deviate from my favorite
chocolate chip cookie recipe even all
not all most of my other cookie recipes
are kind of based off of that one I just
love like the vegan butter brown sugar
combination however I wanted to kind of
branch out and try some different fat
alternatives I guess for these cookies
which is why I settled on almond butter
cookies and these also use coconut oil
as well but I just wanted to try
something new and these turn oh it's so
amazing so I'm so excited for you guys
to try out these almond butter oatmeal
cookies so let's get into the recipe so
the first thing you're going to do is
put your coconut oil and almond butter
into a mixing bowl and my own butter was
pretty hard but it still worked and then
you're going to add your brown sugar or
coconut sugar and mix that with an
electric mixer or you can do it by hand
but like I said my almond butter was
pretty hard so I had to use some extra
power you just want to mix that until
it's all combined and it's light and
fluffy next you're going to add your
non-dairy milk I just used oat milk and
then you just want to mix that until
it's combined then you want to add your
all-purpose flour your oats baking
powder baking soda and salt and again
you can mix that until it's combined
because there's oats in here I chose to
mix it by hand with a wooden spoon but
you can still obviously use an electric
mixer if you want to but you just want
to stir that until it forms a dough and
then lastly you can add in your
chocolate chips and anything else you
like you could add in some chopped nuts
some seeds
anything like that would work but I like
to add a good amount of chocolate chips
in these and these are just some
dairy-free
dark chocolate chips then just take
about a tablespoon and a half
balls in your hand and just roll it into
little cookie dough balls and place them
on a baking tray and then you're going
to bake that at 350 Fahrenheit for about
10 minutes and keep in mind you want to
leave these on the pan to cool for a few
minutes before removing them because
where they are oatmeal
I find that oatmeal cookies are a little
bit more fragile straight out of the
oven so you want to give them a little
bit of time to set but then you can just
put them on a wire cooling rack to cool
and enjoy
